Quality, simplicity, naturalness, careful selection of raw materials, short chain, km0, respect for the "right time" and the environment. This is the philosophy of the first Italian Slow Fast Food to arrive in Italy.
M**Bün, which in Piedmont dialect means "only good", was created in Rivoli (Turin) based on an idea by Paola and Graziano Scaglia and Francesco Bianco to produce high quality fast food, following a model of a short chain: in this Agrihamburgeria in fact, they only cook meat from Piedmont breeds, mainly home grown from the Scaglia farm, which is also in Rivoli, where three generations have produced local farm products. This Slow Fast Food will not only be an alternative to traditional fast food, but a truly new philosophy which is aimed at the consumption of food: Slow in fact represents the time of breeding, maturing and processing that is dedicated to each product; Fast symbolises the dishes for consumption and take-away offerings, cooked according to the "right time" philosophy, the slow fast-English; and finally Food refers to the quality of the raw materials used, no preservatives, nothing frozen and quality controlled from the source to the plate. The meat served, as already mentioned, comes from animals that are born, raised and live on the family farm of Scaglia in Rivoli, where they grow their own cereals and fodder for the feed; the beef is therefore able to bear the mark of Coalvi as certified by the Consortium of Tutela for the Piedmont breed. In the philosophy of M**Bün, whose name is censored with two asterisks because of a dispute with a notable hamburger chain, all of the products are based within zero kilometres or very nearly: the beers are high fermentation and pasteurised by the brewer SorA'laMA ' in Vaie (TO); the wines are by Monferrato and Canavese which are produced at Tenuta Garetto of Agliano Terme (AT) and Massoglia of Caluso (TO); the bread is made from natural products by a small craft bakery in Rivoli (Turin); the strictly fresh potatoes are obtained from Piedmont for the main part of the year and provided by the food company Chieri (TO); the peanut oil used for frying is of Italian origin; the dairy products are from the Fontana di Villastellone Farm (TO); while the desserts come from the workshops of Vang Grugliasco (TO). In short, it is a project which is aimed at closely uniting local resources from the immediate region. In Italy, the culture of fast food does not exist, the hamburger is not identified as a cut of meat and so in Piedmont the idea was put forward; the name of the business and the dishes offered correlating them with their place of origin and the places where they were to be consumed. Amongst the burgers in fact, we find Pulastr 100% chicken, il Gaute Mac Da Suta with onion and bacon, the Tuma with toma cheese, the Chiel combined with salad and tomato; or dishes served with salad or potatoes: the Spatuss 100% fassone filet hamburger with its unusual square shape, the Scaramella grilled and then baked respectively, the Furmage (natural), Prus (with pears), Verd e rusa (rocket and cherry tomatoes), Mach ca brusa (with chillies). At M**Bün, the hamburgers are the most popular products, but the raw meats are also a very popular choice with the customers. Offering the Piemunteisa with garlic, olive oil and lemon, the Franseisa with oil, mustard, capers and anchovies, and the Mediterranean with garlic, olive oil, tomatoes, olives and chilli, also served on square biodegradable plates, because M**Bün choose to minimise packaging by using products made of bi-matter, biodegradable plastics and cellulose paper. Nothing is left to chance: the image they want to create, with a mix of modern and retro, aspects such as trust and cleanliness, the same organisation that only provides on-site cooking and where preparation is carried out directly in production areas. All frozen foods and preservatives are banned, fresh products are cooked on the spot with times ranging from four minutes for the beef to fifteen minutes for the potatoes. M**Bün currently employs 14 people, all young people who are undertaking field training, and who reside in Rivoli and the surrounding towns. Great attention is paid to children, with appropriate biodegradable menus with related games and an educational play area which is located on the lower floor of the building.
